Meet Your Yi Bua Kueh Making Workshop Instructor: Jocelyn Loi
Jocelyn, a third-generation Hainanese kueh-maker, spent ten years working her way up to a senior managerial position at InterContinental Singapore, never imagining that she would one day be continuing her family’s legacy of making kueh. But when her grandmother passed away unexpectedly, Jocelyn felt a deep need to preserve their culinary heritage.
"My grandmother started the 'yi bua' business, and when she passed it down to my mother, I realized that if I didn’t take over, the family recipe and the business would disappear," Jocelyn explained. "So, I left my hotel job to carry on this tradition as a third-generation kueh-maker."
Jocelyn now runs the business from a shophouse in a historic Hainanese neighborhood near Raffles Hotel where we will be learning to make Yi Bua. "It's one of the last places where you can still find handmade 'yi bua,' and I wanted to modernize the business for the next generation while keeping our family heritage alive."
On her Instagram, @allthingshainanese, she shares insights into the art of making the kueh: "There's a certain knack to kneading the dough, adding the filling—the secret’s in the mix—and folding the dough over the filling."
Through this workshop, you'll discover that 'secret mix' and learn how to master the technique of making these traditional treats yourself. "It’s not easy, but once you get it right, the sense of accomplishment is worth it," she said.
